In the case of wood or coal, the heat is regulated by opening and closing an air supply (or the door under the pot). The water vapor, the alcohols and
other volatile components are passed to the condenser and collected as distillate.
Modern industrial distillation systems guarantee a consistently high quality. All factors can be pre-calculated completely and
then be fully electronically controlled. This enables the production of a multiply distilled product of high quality and reduces
any undesired substances. The manufacturer can easily determine themselves the desired mix for its products.
Up to 1988 only a small selection of producers could sell hard alcohol products on the market.
Today, everyone is allowed to make raki - but only with special permission. Thus, the production and distribution of raki in
Greece is allowed. The raki is subject to the law of the alcohol tax, so it must be sold in bottles. Sale of bulk goods is prohibited.
It is also possible to distill raki from the whole, fresh grapes instead of pomace. In this case, the yield will naturally be higher.
When fresh Traupen utilized as a starting point, both white and red grapes can be used.
Again, different flavors such as anise, fennel, etc. Crete or walnut leaves can be added during the distillation. If anise is included,
then the clear liquid is turn white when water or ice are added. Raki / ouzo is widespread - not only in Greece. Usually it is accompanied
by appetizers and served in small glasses (in Greece).
